Black cardamom, also known as badi or moti elaichi is an evergreen, earthy and essential spice in Indian kitchens. Hailed as the queen of spices, this dark brown seed pod can be added whole or split for the seeds to be used separately. Moti elaichi lends a bold astringent flavour to a variety of dishes; it enhances several rice and gravy preparations, be it biryani, pulao , sauteed vegetables, or the delicious chhole (chickpeas). Add it to savoury snacks, soups, chutneys and even desserts like payasam.
